At first, it took a long time and efforts to serve delicious boiled rice at Shunju.
We established an authorized agricultural corporation at Kami-cho in
the north of Hyogo prefecture where we produce rice with organic fertilizer
and compost, and try not to use agricultural chemicals as possible as we can.
As the rice used at Shunju is produced without any agricultural chemicals, it
gives us a lot of trouble to produce. The rice is dried in the sun and kept in rice husks.
We polish the rice just before boiling it.
As for other ingredients, we searched for them in Hyogo prefecture at first
but there are a lot of ingredients in each place in Japan which are better quality
and we can not get in Hyogo prefecture.
Now, we gather high quality ingredients from various parts of Japan.
Concerning fish, we go to "Akashi-Ura fishing port" to buy fish, which is one of the best fishing ports in Japan.
We opened "Auberge Hanagourih at Kami-cho in the north of Hyogo prefecture and got the connection with "Hamasaka fishing porth where we can buy fresh firefly squid, prawn and Matsuba crab.
